Salted Peanut Butter-Pretzel-Chocolate Chip Cookies

2/3 cup pretzel sticks, crushed
1 cup quick oats
1 cup bittersweet chocolate chips
2/3 cup chunky peanut butter
1 large egg
1 1/4 cups all-purpose flour
1 tsp baking soda
1/4 tsp salt
1 1/4 cups light brown sugar
12 tbsp unsalted, softened butter
1 tsp vanilla extract
Flake sea salt
1) Combine flour, oats, baking soda, and salt in bowl.
2) Mix butter and sugar in stand mixer for 1 minute. Add peanut butter, egg, and vanilla. Mix until fluffy, scraping down sides of the bowl.
3) Reduce speed, add flour mixture until just combined.
4) Add chocolate chips and pretzels until just combined.
5) Cover tightly with plastic wrap and refrigerate for 1 hour.
6) Preheat oven to 350℉ and position oven racks in upper-middle and lower-middle positions.
7) Line 2 baking sheets with parchment (or wax) paper.
8) Roll 2 tbsp size balls with about 1 1/2 in space between each other.
9) Bake for 11-13 minutes, rotating sheets halfway through. Cookies should be puffed and slightly cracked at the top.
10) Cool cookies on sheets for 5 minutes, then sprinkle sea salt on top. Transfer to wire rack.
